I like to toss in some broccoli for added nutrients and top it with my favorite dairy free cheese! The recipe is gluten free and mostly dairy free (except for a small amount of dairy in the cream of chicken soup). And it can be easily modified to include more vegetables such as mushrooms, spinach, etc. for extra nutrients! Bom apetite!
Gluten Free Chicken Noodle Casserole with Broccoli
A delicious, gluten free and mostly dairy free comfort food casserole that is easy to make!
Ingredients
- 2 20 oz. cans of canned chicken
- 8 oz. gluten free pasta
- 10.5 oz. gluten free cream of chicken soup (contains milk)
- ½ cup chopped green onions or yellow onions
- ½ cup chopped celery
- ¼ cup unsweetened almond milk
- ½ cup mayonnaise
- 1½ cups chopped broccoli
- ½ cup dairy free cheese
Instructions
- Preheat oven to 375°F.
- Steam chopped broccoli until tender.
- Cook pasta as directed on package.
- In a large mixing bowl, combine canned chicken (drained), chopped green or yellow onions, chopped celery, unsweetened almond milk, mayonnaise, and dairy free cheese.
- Add the cooked pasta and steamed broccoli. Stir.
- Pour combined ingredients into a lightly greased 9 x 9 inch baking dish.
- Cook for 40-45 minutes at 375°F.
Notes
This recipe is very easy to modify if you prefer not to use gluten free and dairy free ingredients. Simply use regular pasta, milk and cheese.
